There's no microphone except on some remotes and there's no camera. The remotes that do have a mic are only active when the button is pressed, which activates the search function on the Roku. I just happened to learn about Zoom yesterday, and based on the training I received I can't see any way a Roku could be used, except as a view only device.

Really not worth it. You need a mic, camera, and some way to use the on-screen controls. The Roku remote would be a pain to use if you need to access the controls, use the chat function, or almost anything else you do with Zoom. Is AppleTV the only way to do that? Screen sharing from a Windows PC to a Roku device has been done by some people, but it's problematic at best. You can't screen share from iOS at all, but Android devices in general work well. I can absolutely see the benefit of having a screen larger than the computer, as I use a 43" 4K TV as a second monitor when I telework.
